Fulvio Bressan, the 9th generation to carry the family name, honours this heritage by combining traditional methods with an uncompromising respect for the environment. His approach to winemaking prioritises the vineyard’s natural harmony, ensuring that every bottle reflects the essence of its terroir.
The Bressan vineyards are a testament to sustainable practices. Only natural fertilisers from the barn are used when absolutely necessary, and all chemical and synthetic products, including pesticides and herbicides, are strictly banned. The vines, averaging 70 years of age, are pruned to 4-5 buds to encourage lower yields and higher-quality grapes. Additionally, the vineyards are dry-farmed, relying solely on the deep roots of the vines to access water and nutrients from the gravelly, mineral-rich soils near the Isonzo river.
This focus on soil health and natural balance is key to Bressan’s philosophy. Fulvio believes that the integrity of the vineyard is paramount, and his meticulous care allows the vines to produce fruit with unparalleled complexity and depth. While the winery does not carry organic or biodynamic certifications, Fulvio’s self-imposed standards surpass many of these frameworks. His low-interventionist approach extends to the cellar, where he uses native yeasts, long maceration periods, and ageing in a mix of traditional wooden casks, including cherry, oak, and chestnut.

The vines, averaging 70 years old, grow in clay and limestone soils enriched with layers of sandstone. The grapes are softly pressed, with the flower must fermenting for 28 days on the skins. After ageing for two years in 20Hl wooden casks, followed by stainless steel and bottle fining, the result is a complex wine with vibrant stone fruit flavours and a refreshing mineral finish.
