The vineyard is farmed biodynamically with hand harvesting to preserve the delicate fruit. The grapes are whole cluster pressed gently and fermented spontaneously with native yeasts in a combination of stainless steel tanks and large old oak barrels. No sulphur is added during fermentation. The wine undergoes full malo-lactic fermentation and is aged on fine lees with occasional stirring to enhance texture and complexity over about 10 months. Bottling is typically unfined and unfiltered in late winter following the vintage. Bright and expressive, this Chenin Blanc reflects the unique minerality and freshness of its terroir.
