Why Cave selected it

Tiny 2,500‑bottle cuvée from marnoso‑calcareous soils in Pressano; long lees ageing delivers depth and a clean, mountain‑fresh profile.

About the wine

This Chardonnay comes from vines over 27 years old, grown in clayey topsoil with limey soil rich in marlstones and west-facing exposures. 60% fermented in old barriques and 40% in stainless steel vats lasting for 30 days, followed by 10 months of maturation on its lees. The wine is then fined in the bottle for at least 4 months before release. Elegant Dolomiti Chardonnay.

About Azienda Agricola Fanti

Located in the small town of Pressano, on the hills of Trentino Alto-Adige, the Fanti winery makes its small size one of its strengths. Managed since 1991 by Alessandro Fanti, son of the first owner Giuseppe, the winery is divided between the countryside and a 17th-century rural house in the historic centre of the village. The location is not the only traditional feature: Alessandro has recovered the old agronomic practices, fundamental for improving the quality of grapes and wine, and so today he produces wines full of character, fresh and fragrant, with white grapes from Incrocio Manzoni, Nosiola, Chardonnay, and red grapes of Teroldego, Cabernet Franc, Cabernet Sauvignon, Merlot, with skilful processing and long waits from fermentation to refinement in the bottle.
