About the wine


The grapes are handpicked from the vines, which have an average age of 30 years. Subsequently, they undergo vinification in stainless steel vats before undergoing malolactic fermentation. Dare we say, this is great value Champagne!

Among them are Aurélien’s esteemed friend and neighbor, Cédric Bouchard, along with other esteemed houses such as Marie Courtin, Jacques Lassaigne, Ulysse Collin, Horiot, and Vouette et Sorbée.

The Gerbais family now owns 18 hectares, 10 hectares of Pinot Noir, 4 hectares of Chardonnay, and a rarity, 4 hectares of Pinot Blanc. The winery and all the vineyards are located in Celles sur Ource, at the confluence of four valleys carved by the rivers Seine, Arce, Laigne and Ource.
