The estate’s vineyards are farmed organically and biodynamically, with all fruit hand-harvested into small crates to preserve berry integrity. Grapes are whole-cluster pressed gently, then settled overnight before spontaneous fermentation with indigenous yeasts in seasoned Burgundian oak barrels (20% new). The wine undergoes full malolactic conversion and spends approximately 12 months on its fine lees with occasional bâtonnage for texture. No fining or filtration is applied, and a light addition of sulfur occurs only at bottling in the autumn following the vintage. The result is an elegantly poised Chardonnay, offering crystalline minerality and pristine white-flower aromatics.
Notes on the producer
After training under renowned vignerons, Pierre-Yves launched his own domaine in Vosne-Romanée in the early 2000s. Son of Bernard Morey (of Domaine Morey-Saint-Denis), he quickly established a reputation for precision and purity in both red and white Burgundies. His parcels span several prestigious sites in the Côte de Nuits, and he transitioned fully to organic certification by 2012, adding biodynamic preparations from 2015 onward. All cellar work is carried out by gravity in his purpose-built winery, minimizing pump usage. Fermentations rely exclusively on native yeasts, and aging takes place in a mix of older oak barrels to preserve primary fruit expression. Pierre-Yves’s white Burgundies are celebrated for their fresh acidity, lithe structure, and mineral clarity, making them some of the most sought-after Côte de Nuits Chardonnays.
