The fruit is sourced from several high-altitude parcels in Saint-Aubin, farmed with minimal intervention and great attention to vine balance. The grapes are hand-harvested, carefully sorted, and gently pressed as whole clusters. Fermentation occurs naturally with indigenous yeasts in French oak barrels (around one-third new), without the use of additives or enzymes. The wine undergoes full malolactic conversion and is aged on fine lees for 12–15 months without bâtonnage. Bottling takes place without fining or filtration, preserving the wine’s purity and mineral drive. Focused, crystalline, and layered, this is a benchmark expression of Saint-Aubin Chardonnay.

Pierre-Yves Colin-Morey is one of Burgundy’s most respected contemporary winemakers, renowned for his precision, purity, and meticulous approach. After working for his family’s Domaine Marc Colin, Pierre-Yves founded his own domaine and négoce operation in 2005 alongside his wife Caroline Morey in Chassagne-Montrachet. His philosophy centers on expressing terroir through minimal intervention—working with sustainably and organically farmed vineyards across the Côte de Beaune, including Saint-Aubin, Meursault, and Puligny-Montrachet. Vinifications are guided by natural fermentations, gravity flow, and long élevage in carefully selected oak barrels. The cellar work avoids bâtonnage to maintain tension and freshness. Today, Pierre-Yves Colin-Morey wines are considered among the most sought-after in Burgundy, prized for their depth, clarity, and unwavering sense of place.
