Vines are tended according to sustainable / organic principles with very careful yields and hand-harvesting. Fruit is gently pressed (Colin-Morey is known to press at relatively high pressure), fermented with a mix of indigenous and selected approaches depending on the parcel, and élevaged in larger 350L demi-muids for extended periods (typically ~12–18 months) with minimal bâtonnage. Wines are made with a light, interventionist touch in the cellar — long élevage, little or no fining, and often bottled unfined and unfiltered to preserve site expression. The result is a Chardonnay that shows orchard fruit, beeswax and a stony mineral core with Burgundy precision.
Notes on the producer
Pierre-Yves Colin-Morey grew up working in the family domaine (Marc Colin) and launched his own project in the early 2000s with Caroline Morey. Based in Chassagne-Montrachet, the domaine owns and manages several high-quality Côte de Beaune parcels (roughly ~6–6.5 ha owned, with additional purchased fruit), concentrating on terroir-driven Chardonnay and small amounts of Pinot Noir. He is celebrated for meticulous vineyard work, larger demi-muid élevage, restrained use of oak, and a minimal-intervention cellar approach that aims to let each site — including Santenay La Comme — speak clearly in the glass.
