The farming is carried out sustainably with a strong respect for the health of the vines and soils. The grapes are hand-harvested and carefully sorted in the vineyard. Fermentation is spontaneous with indigenous yeasts, and the fruit is largely destemmed. Extraction is gentle, aiming to preserve the purity and energy of the Pinot Noir. The wine is aged in French oak barrels, around one-third new, for about 15 months before bottling without fining or filtration. The result is a vibrant, finely etched Burgundy that combines red fruit purity with minerality and structure.
Notes on the producer
Pierre-Yves Colin-Morey is among the most respected names in modern Burgundy, known for his meticulous craftsmanship and transparent, terroir-driven wines. After working as winemaker for his father’s Domaine Marc Colin, Pierre-Yves established his own domaine and négociant business in Chassagne-Montrachet in 2005 alongside his wife Caroline Morey. While his whites from Chassagne and Saint-Aubin are celebrated for their precision and tension, his reds, particularly from Santenay, display remarkable depth and finesse. He practices low-intervention winemaking with spontaneous fermentations and minimal sulphur, favoring long élevage in fine-grained oak. His philosophy centers on allowing each parcel to express its origin clearly, producing wines of energy, texture, and profound sense of place. Allocations are small and highly sought after, reflecting the domaine’s cult status among Burgundy collectors.
