The farming is certified-biodynamic and the harvest by hand. The fruit is whole-bunch pressed, and fermentation occurs spontaneously with indigenous yeasts and minimal sulphur in tank. The wine undergoes full malolactic fermentation and is aged on fine lees without bâtonnage or racking, primarily in old oak barrels for around a year. Bottling is done without fining or filtration, typically the summer following the vintage. Lively & mineral-driven, showcasing Chardonnay’s precision in Jura’s distinctive terroir.
Notes on the producer
Philippe Chatillon has been crafting expressive, terroir-driven wines from his biodynamic vineyards in the Jura since 2013. After years working for other wineries, including a decade as director at the Domaine de la Pinte, Philippe set out to establish his own domaine with a focus on minimal intervention and ecological respect. His vineyards near Passenans sit on limestone and marl soils typical of the Jura, bringing intensity and freshness to the wines. The domaine is certified biodynamic by Demeter, and Philippe works entirely by hand in the vines. He avoids synthetic treatments, opting for herbal preparations and natural biodiversity to maintain vineyard health. In the cellar, gravity is used to move the wine, fermentations are spontaneous, and sulphur is kept to an absolute minimum. His range highlights the unique identity of Jura, producing beautifully pure wines that reflect both place and philosophy—highly sought after by lovers of natural wine.
