The vineyards are certified-organic and harvested by hand. Fruit for Les Varrons comes from old massale-selection vines in the Les Varrons lieu-dit; vinification is low-intervention using indigenous yeasts with careful, gentle extraction for the red cuvée. The wine is matured in older Burgundian-style oak barrels (shortish élevage, typically under a year) with minimal or no added sulphur and is usually bottled without fining or filtration. Bright red fruit, floral perfume and a savoury, mineral finish are typical of this parcel-specific Pinot Noir.
Notes on the producer
Founded by Alain Labet and now run by his children Julien, Romain and Charline, Domaine Labet (Rotalier, southern Revermont) is a family domaine celebrated for parcel-by-parcel (“lieu-dit”) wines that showcase Jura terroir. The estate (≈13–15 ha across many small parcels) converted to organic viticulture over the last decade and works with massale selections, old vines and a restrained cellar approach — balancing traditional Jura techniques (both ouillé/topped-up and some sous-voile styles for whites) with a modern low-intervention ethic for the parcellaire cuvées. Domaine Labet’s Les Varrons Pinot Noir is a good example of their single-plot philosophy: precise, perfumed and terroir-driven, and frequently produced with very low sulphur or none added.
