The grapes are typically hand-harvested from old-vine parcels on Bajocien limestone, pressed gently and fermented with indigenous yeasts. The cuvée is aged long in used oak (demi-muids / 228–600L barrels) — commonly between c.17–27 months depending on vintage — with the domaine practising “ouillé” topping-up on many whites. Bottling is carried out with minimal intervention (often unfined and unfiltered) and with very low or no added sulphur on certain cuvées. The result is a powerful, chalky Chardonnay with clear oak influence, bright acidity and excellent aging potential.

Domaine Labet is a family domaine founded in 1974 in Rotalier (southern Jura) by Alain and Josie Labet; today the estate is run by the family (notably Julien, with siblings Romain and Charline heavily involved). The domaine farms many small parcels on rare Bajocien limestone soils and works with old massal selections of Chardonnay (vines often several decades old). Under Julien the estate moved decisively toward organic practices (Ecocert) and combines traditional Jura techniques (both ouillé/topped-up élevage and the production of sous-voile styles) with careful, low-intervention cellar work — native ferments, long élevage in older barrels/demi-muids, and restrained use of SO₂. Labet’s Le Montceau is one of the domaine’s flagship Chardonnays: textural, mineral and sought after by collectors.
