he vineyards are composed of old, family-owned Nebbiolo vines (average age ca. 50 years) and fruit is harvested by hand. Fermentation is carried out mainly in stainless steel with délestage and manual punch-downs; malolactic fermentation completes naturally. The wine is matured in large oak containers (tonneaux / 500L casks depending on the cuvée) for extended élevage (c. 24–36 months), generally with minimal fining or filtration before bottling. The result is a dry, austere Nebbiolo — bright garnet, floral (violet/cyclamen) and cherry notes, with fine tannins, spicy detail and a clear mineral backbone suited to medium-long ageing.
Notes on the producer
Paride Iaretti is a small, traditional Gattinara estate rooted in the local winemaking heritage. The estate focuses almost exclusively on Nebbiolo from a handful of old, low-yield vineyards around Gattinara (the company’s holdings amount to only a few hectares). Paride’s wines — notably the regular Gattinara “Pietro” and the Riserva — are vinified in a straightforward, terroir-driven manner and spend prolonged time in oak before release; the Pietro bottlings have received strong regional recognition (including high marks from Italian critics). The winery operates from the historical cellars in Gattinara and emphasizes traditional, low-intervention practices.
