The farming is certified-biodynamic and the grapes are hand-harvested. Bunches are destemmed by hand, followed by whole-cluster fermentation with indigenous yeasts in 500 L tronconic vats without pumping over. After a gentle maceration, the wine is aged for one year on its fine lees in neutral, truncated-cone vessels. Bottling occurs in the autumn following the vintage without fining or filtration. The result is perfumed and light on its feet, yet vibrant with dark berry fruit and a tense mineral finish.
Notes on the producer
Jean-François “Fanfan” Ganevat, based in the village of Rotalier in Jura’s Sud-Revermont, carries on a family vigneron tradition dating back to 1650. Together with his wife Anne, he has managed their 13 ha estate biodynamically since 2014, eschewing all synthetic inputs and sulfur from harvest through vinification. Ganevat works parcel by parcel—hand-destemming, indigenous fermentations, aging on lees in a variety of neutral vessels, and minimal intervention—to highlight the unique terroirs of Jura. Plein Sud is drawn from south-facing Trousseau vines (15–60 years old) planted on white marl, scree, and gravel in the En Chaladigna lieu-dit. His purity-driven approach and singular style have earned him international acclaim as one of Jura’s most charismatic and sought-after producers.
