The grapes are hand-harvested from schist and marl sites, 100 % destemmed with a portion of whole clusters, and fermented spontaneously on indigenous yeasts in open-top fermenters. After malolactic conversion, the wine is aged for one year in Burgundian barrels of various ages, then bottled unfined and unfiltered to preserve its purity and terroir expression.
Notes on the producer
Jean-François Ganevat has been at the forefront of Jura’s natural wine movement since founding his domaine in 1993. Farming organically and incorporating biodynamic preparations, he works dozens of tiny parcels around Rotalier, Montigny-lès-Arsures and Pupillin. Each cuvée undergoes its own spontaneous, often whole-cluster, fermentations with minimal sulfur additions and no filtration. Aging is carried out in neutral Burgundian barrels or large foudres by gravity, resulting in wines celebrated for their vibrancy, precision and sense of place.
