The vines are farmed biodynamically, hand-harvested into small crates, and whole-cluster pressed directly. Fermentation is spontaneous on indigenous yeasts, with zero sulfur additions, in large oak foudres and demi-muids. The wine spends three and a half years on its gross lees, without bâtonnage, racking, fining, or filtration, before minimally sulfured bottling the autumn after harvest. The result is a pure, smoky-mineral Riesling that captures the granite terroir in every sip.
Notes on the producer
Anne and Jean-François represent the 14th generation of a family that has tended vines at La Combe de Rotalier since 1650. Jean-François trained under Jean-Marc Morey in Chassagne-Montrachet before returning home in 1998, immediately converting the 13 ha estate to organic viticulture and then to biodynamics in 2006. He practices parcel-by-parcel selection, gravity-flow cellar work, and sources a small amount of old Alsatian Riesling to complement his estate holdings. There has never been any SO₂ added at harvest or during vinification, and aging is conducted in seasoned foudres to preserve freshness and terroir expression. Their wines are fiercely sought after by natural-wine collectors worldwide
