The farming is certified-organic and the harvest is done entirely by hand. The fruit is carefully selected, destemmed, gently pressed and undergoes spontaneous fermentation with indigenous yeasts in stainless steel tanks. No sulphur is used during vinification. The wine completes malolactic fermentation and is matured on its fine lees without bâtonnage or racking for nearly a year. Bottling takes place without fining or filtration in the Autumn following the harvest. A pure and mineral expression of Pinot Blanc from Alsace, showing remarkable precision and energy.
Notes on the producer
Domaine Lissner is a family estate based in Wolxheim, Alsace, known for producing vibrant, terroir-driven wines with minimal intervention. The Lissner family has cultivated vines here for generations, with a deep commitment to ecological and organic farming practices. The vineyards, situated on limestone and marl soils, are managed with biodiversity in mind, including cover crops and the absence of chemical inputs. In the cellar, the approach is hands-off: native yeast fermentations, no added sulphur during vinification, and long lees aging enhance the clarity and character of the wines. The focus is on purity, expression of site, and sustainable stewardship of the land.
