About the wine

 

 

Biancoviola comes from organic vineyards where a focus on nature works towards the natural fertility of the soil. Organic farming techniques are used together with biodynamic concepts and the harvest is carried out manually. The wine goes through spontaneous fermentation in stainless steel tanks and macerates on skins for three weeks. Bottled without filtering. A saline and citrussy number. With less maceration then some other Aldo Viola cuvees it makes it more approachable and easy drinking. 

About Aldo Viola

Aldo Viola is a family winery in the city of Alcamo, on the northwest coast of Sicily. With 16 hectares of organic vineyards, only the highest quality grapes are used to make the natural wines. A small production of around 10,000 bottles a year across four different labels. The vineyards are cultivated using the Guyot system and lie at 400 m above sea level. Organic farming methods are used along with organic and biodynamic treatments. The harvest is carried out manually at the optimum moment of ripeness.
