Why Cave selected it

Certified-organic and Demeter-biodynamic grower Champagne expressing a single Essoyes parcel of Pinot Noir with zero dosage and minimal intervention.

About the wine

This cuvée is made from 35 to 40yo vines of pinot noir, they were planted with an old massal selection and yield an extremely qualitative juice. The south to southwest facing rocky slope is surrounded by forest in a place where 30 species of butterflies (papillon) have been recorded. Aged for nine months in fûts and demi-muids, and then for 20 months 'sur lattes'

About Ruppert-Leroy

Bénédicte Ruppert and Emmanuel “Manu” Leroy farm four hectares around Essoyes in the Côte des Bar. Organic-certified since 2013 and Demeter-certified since 2014, they combine vines with livestock and homemade compost, crafting parcel-by-parcel Champagnes with a vivid sense of place.
Thoughtful farming and a clear focus on individual sites give these Champagnes both freshness and texture. Wines for the table, with the character of the Côte des Bar at their heart.
