Why Cave selected it

A precise, food-friendly Crémant with Chardonnay freshness and enough texture for the table. Fine bubbles and a dry finish make it a versatile choice for an aperitif or seafood.

About the wine

Domaine Thévenard’s Crémant de Bourgogne is a non-vintage Blanc de Blancs Extra Brut made entirely from Chardonnay. The grapes come from Farges-lès-Mâcon in southern Burgundy, giving a sparkling wine with fresh fruit, fine bubbles and a dry, precise finish.

Green apple and lemon meet a gentle brioche note and a chalky edge. Bright acidity keeps it lively, while maturation brings a little extra texture. A lovely aperitif, or a bottle for seafood, gougères and fish and chips.

Based in Uchizy, Pascal Thévenard and his sons Gaétan and Matthieu began bottling under their own domaine name in 2021, continuing generations of family winegrowing. Their approach combines careful vineyard work with natural fermentations and restrained use of oak.

How it is made

Traditional-method Blanc de Blancs Extra Brut, made from 100% Chardonnay. Natural fermentation and barrel maturation of the base wine precede the second fermentation in bottle and lees ageing. Published ageing and dosage figures vary by release; the exact base vintage, disgorgement and dosage for this bottle are unconfirmed.

Vineyard & terroir

Chardonnay from a parcel in Farges-lès-Mâcon in the Mâconnais. The importer technical sheet describes east to southeast exposure, 200–250 metres altitude and predominantly silty clay soils.
