Why Cave selected it

A characterful grower Champagne that combines Verzy’s depth with the complexity of a perpetual reserve. Biodynamic farming and a vinous, savoury style make it a particularly good match for the table.

About the wine

L’Ascendant is a Grand Cru Champagne from Verzy in the Montagne de Reims, blending 60% Pinot Noir with 40% Chardonnay. A perpetual reserve brings together several harvests, giving the wine depth, texture and savoury complexity.

Expect orchard fruit, citrus and toasted nuts, with creamy bubbles and a fresh, dry finish. A generous, vinous Champagne for roast poultry, mushroom dishes or mature hard cheeses.

The Mouzon family has grown vines in Verzy since 1776. Today, Sébastien Mouzon works alongside his family, with biodynamic farming practised since 2008 and certified by Demeter. Biodiversity in the vineyards and a restrained approach in the cellar are central to the estate’s character.

How it is made

A blend of 60% Pinot Noir and 40% Chardonnay, drawn from a perpetual reserve (solera) of several harvests. Native-yeast fermentation, oak vinification and maturation on lees, without fining or filtration. Base years, dosage and disgorgement vary by release.

Vineyard & terroir

Verzy Grand Cru in the Montagne de Reims, Champagne. Pinot Noir and Chardonnay grown on chalk with calcareous clay and flint. The estate has farmed biodynamically since 2008 and is Demeter certified.
