Why Cave selected it

A precise, expressive Blanc de Blancs that balances the chalky freshness of Le Mesnil with the texture of oak and reserve wines. A thoughtful grower Champagne with the depth to accompany a meal.

About the wine

Mon Village is Paul Girard’s tribute to Le Mesnil-sur-Oger, the Grand Cru village at the heart of his family’s history. Made entirely from old-vine Chardonnay, it brings together the village’s chalk-rich sites in a precise, expressive Blanc de Blancs Champagne.

Barrel fermentation and a perpetual reserve aged in large oak casks add breadth and depth. White flowers, ripe citrus and orchard fruit meet fine bubbles and a fresh, saline finish. Its Extra Brut style makes it a lovely match for oysters, grilled fish or mushroom risotto.

Paul united the Girard and Bonnet family vineyards to create the domaine in 2018. Based in the Côte des Blancs, the estate gained organic and biodynamic certification in 2023. Herbal preparations, cover crops and grazing support the vineyard work, while gentle cellar practices preserve the character of each site.

How it is made

100% Chardonnay. Indigenous-yeast fermentation in oak barrels and ageing on lees. The blend includes a perpetual reserve matured in large oak casks. Extra Brut; no fining or filtration. Base year, blend proportions, exact dosage and disgorgement vary by release and are not confirmed for Cave’s stock.

Vineyard & terroir

Old Chardonnay vines across Le Mesnil-sur-Oger Grand Cru in the Côte des Blancs. Clay-limestone and colluvial soils over Campanian chalk, including sites where chalk reaches the surface. The estate has been certified organic and biodynamic since 2023.
