About Girard-Bonnet
Girard-Bonnet brings together two winegrowing families: the Girards of Le Mesnil-sur-Oger and the Bonnets of Oger. Paul Girard united their holdings in 2018 to create a domaine bearing both names. Its vineyards include Grand Cru and Premier Cru sites in the Côte des Blancs.
Paul’s approach combines careful farming with separate treatment of individual sites. Organic and biodynamic certification followed in 2023. In the cellar, natural fermentation and lees ageing build texture, while bottling without fining or filtration preserves the character of each wine.
In the vineyard
Organic and biodynamic farming, certified since 2023. Herbal preparations, cover crops, grazing and agroforestry support biodiversity and soil life, with vineyard work tailored to each site.
In the cellar
Parcels are pressed separately and ferment naturally. Wines age on lees before bottling without fining or filtration. Oak, stainless steel and amphora are used according to the site and cuvée.
