Why Cave selected it

Grower Champagne with a clear sense of place: pure Pinot Meunier from the Vallée de la Marne, carefully farmed by Fabien Cazé and fermented with native yeasts in oak. A characterful choice for anyone exploring small Champagne producers.

About the wine

Naturellement is a Blanc de Noirs Champagne made entirely from Pinot Meunier grown around Châtillon-sur-Marne, on the right bank of the Vallée de la Marne. Fermentation takes place with native yeasts in oak barrels, and the wine is bottled without fining or filtration.

Dry and textured, with creamy bubbles, fresh fruit and a subtle savoury edge, this is a characterful grower Champagne for the table as well as an aperitif. Serve chilled at 8–10°C; try it with oysters, shellfish or roast poultry.

About the producer

Fabien Cazé took charge of selected family vineyards in 2007 and bottled his first harvest in 2013. Based in Châtillon-sur-Marne, Cazé-Thibaut farms 4.5 hectares with certified organic viticulture. Individual parcels are harvested and vinified separately, with fermentation and ageing in oak in a cool underground chalk cellar. Careful vineyard work and restrained winemaking keep the focus on the character of each site.

How it is made

100% Pinot Meunier. Spontaneous fermentation with native yeasts in oak barrels; bottled without fining or filtration, with natural cold settling. Traditional-method Blanc de Noirs Champagne.
