Cazé-Thibaut
Châtillon-sur-Marne, Vallée de la Marne Champagne France
Fabien Cazé runs this small grower Champagne estate in Châtillon-sur-Marne. He took over selected family vineyards in 2007, adopting organic farming before bottling his first harvest in 2013. The estate now covers 4.5 hectares, with parcels harvested and vinified separately. Native-yeast fermentation and oak ageing in an underground chalk cellar bring texture while preserving each site’s character. Naturellement showcases Pinot Meunier from the Vallée de la Marne.
