Why Cave selected it

A vivid introduction to Sylvain Pataille’s thoughtful farming and light-touch winemaking, with the freshness and savoury detail we love in Pinot Noir.

About the wine

Sylvain Pataille’s Bourgogne Rouge 2023 is an expressive Pinot Noir with juicy berry fruit, plum and a savoury, gently spicy edge. Freshness and supple tannins keep it lively and easy to return to.

Organically grown fruit, native-yeast fermentation and gentle extraction give this wine its clear, unforced character. Serve at cellar temperature with roast duck, mushroom risotto or charcuterie.

Based in Marsannay-la-Côte, Sylvain began his domaine with a single hectare in 1999. A trained oenologist and champion of his home village, he works organically with biodynamic methods, paying close attention to old vines and the character of individual sites.

How it is made

Native-yeast fermentation with gentle extraction, followed by maturation in oak barrels and low sulphur additions. Whole-bunch proportions and barrel ageing are adapted to the cuvée and vintage.

Vineyard & terroir

Pinot Noir grown on clay-limestone soils in the northern Côte de Nuits, around Marsannay. The producer’s agent describes old vines and certified organic cultivation with biodynamic methods.
