The vineyards are farmed organically and the grapes are picked by hand. Fruit is destemmed and vinified in temperature-controlled stainless steel to preserve bright red-fruit and floral aromatics; after fermentation the wine is matured for approximately six months in large oak casks and tonneaux (including traditional 30-hl botti) to build texture and tame the tannins. The house typically uses light clarification and gentle filtration ahead of bottling. The result is a perfumed, savoury Sangiovese showing cherry, plum and a hint of spice.
Notes on the producer
San Patrignano is the cooperative winery of the Comunità di San Patrignano, founded in the late 1970s; over the decades the project has grown to include more than 100 hectares of vineyards on the hills overlooking Rimini and Coriano. The cantina blends modern cellar technology (stainless steel tanks, controlled fermentations) with traditional maturation in large oak vessels, and many of its vineyards are worked with organic methods as part of the estate’s commitment to quality and social enterprise. The winery produces a wide range of labels — from everyday reds to single-vineyard bottlings — all sold under the cooperative’s banner, with Aulente representing their approachable Sangiovese-led Rubicone expression.
