Why Cave selected it

A vivid expression of Chardonnay from the Côte des Bar, combining limestone freshness with the texture of barrel ageing. Thoughtful biodynamic farming and an uncompromising Brut Nature style make this a compelling Champagne for food.

About the wine

Martin-Fontaine 2022 is a single-vineyard Blanc de Blancs Champagne made entirely from Chardonnay. Its clay-limestone soils, rich in white limestone, bring a bright, mineral character to this expressive wine from the Côte des Bar.

Lemon, pear and white flowers meet a creamy texture, fine bubbles and a long, saline finish. Fermented and matured in barrels and demi-muids, it is bottled as Brut Nature, with no dosage and no added sulphur. Try it with oysters, scallops or aged Comté.

Bénédicte Ruppert and Emmanuel Leroy farm four hectares around Essoyes. Certified organic since 2013 and Demeter-certified since 2014, their estate combines vines with livestock and homemade compost. Each parcel is vinified separately to preserve its individual character.

How it is made

100% Chardonnay from the 2022 harvest. Fermented with indigenous yeasts in barrels and demi-muids, then matured on lees with natural malolactic fermentation. No fining or filtration. Brut Nature with no dosage and no added sulphur. Exact disgorgement date not confirmed for Cave’s stock.
