Preserved lemon, white flowers and wild fennel lead into sea-spray salinity and a cool, chalky finish. The palate is concentrated and textural, but the piercing acidity gives it remarkable energy, precision and length. It is already compelling and built to develop for many years.
Domaine Lajibe is the Jurançon project of Jean-Baptiste Semmartin in Lucq-de-Béarn. After experience in Burgundy, he began making wine here in 2015, focusing on organically farmed local varieties and precise, low-intervention dry whites with remarkable tension.
