The vines for Chardonnay Pépin Blanc are between 40 and 80 years old and grow on calcareous marl soils, interspersed with clay, around the village of Pupillin. Like all the grapes from the three hectares that Kevin Bouillet owns, the grapes are picked by hand. The wine is then pressed directly and the young wine is placed in small used wooden barrels for at least a year. Kevin's wines are still available at an affordable price but this wont last forever so grab em whilst you can.

 Notes on the producer

In his early thirties, Kevin Bouillet took over the family business. 4 hectares in the “Arbois-Pupillin” appellation which he converted to organic. There, he cultivates the 5 traditional Jura grape varieties plus a sixth less well-known that the locals call the « Melon à queue rouge ». A cousin of Chardonnay, neglected since the 1970s due to its low yield and the small size of its grapes.

In the vineyard, Kevin is meticulous and precise: he keeps track of each treatment carried out, makes sure that the soil is grassed over... the young man works alone all year round and only calls on friends and family at harvest time. He is defintely one to watch for the future.
