Why Cave selected it

A textured grower Champagne that combines the freshness of a Chardonnay-led blend with enough savoury depth to carry a meal.

About the wine

Roc Solare brings together bright citrus and orchard fruit with a creamy texture and a fresh, savoury finish. Chardonnay leads the blend at 90%, with 10% Pinot Noir adding breadth.

This non-vintage Extra Brut is based on the 2021 harvest, with reserve wine adding depth. Its fruit comes from the flint-rich soils of the Coteaux du Sézannais. A Champagne with enough texture for the table: try it with oysters, grilled fish or roast chicken.

How it is made

90% Chardonnay and 10% Pinot Noir. Non-vintage blend based on the 2021 harvest, incorporating perpetual-reserve wine. Vinified using both tank and barrel; bottled as Extra Brut.

Vineyard & terroir

Fruit from the Coteaux du Sézannais, where flint-rich soils distinguish this cuvée from the domaine’s Côte des Blancs wines.

About Dhondt-Grellet

Dhondt-Grellet is a family Champagne estate based in Flavigny, near Avize, with vineyards in the Côte des Blancs and the Sézannais. Adrien Dhondt took over the winemaking in 2012. His approach places living soils and careful vineyard work first, followed by spontaneous fermentations, barrel ageing and reserve wines in the cellar. The resulting Champagnes combine site character with a broad, vinous texture.
