Producer

Chiara Condello works in Predappio, one of Romagna’s historic centres for Sangiovese. Her approach is restrained and traditional: organic farming, native fermentations and large neutral vessels, allowing the local Spungone soils to remain at the centre of the wine.

How it is made

Hand-harvested Sangiovese ferments with native yeasts and macerates for 15–25 days, before ageing in large Slavonian oak casks and stainless steel.

Vineyard & terroir

Fruit comes from four hectares around Predappio on Spungone: ancient marine sandstone rich in limestone, clay and fossil material, giving the wine freshness and a distinctly savoury mineral character.
