Why Cave selected it

For its expressive Bouzy Pinot Noir, careful organic and biodynamic farming, and the texture and depth that make this rosé Champagne especially good at the table.

About the wine

About the producer

Benoît Lahaye is a family grower based in Bouzy, a Grand Cru village on the southern slopes of the Montagne de Reims in Champagne. The family has made Champagne here since the 1930s. Benoît took over the domaine in 1993 and works alongside his wife, Valérie.

The estate farms around 4.8 hectares, with vineyards in Bouzy, Ambonnay and Tauxières. Pinot Noir dominates the holdings, giving the wines their depth, structure and distinctive sense of place. Farming is certified organic and biodynamic, with an emphasis on living soils and careful vineyard work. Horse ploughing helps limit soil compaction.

In the cellar, parcels are vinified separately using indigenous yeasts, with barrel fermentation and time on the lees. The approach is guided by the quality of the fruit and the character of each vineyard, producing expressive, vinous Champagnes with freshness and energy.

About the cuvée

Rosé de Macération is made from Pinot Noir grown in Les Juliennes, a chalky vineyard in Bouzy planted in 1973. A short maceration on the skins gives the wine its colour and red-fruit character before pressing. It is a distinctive expression of Lahaye’s Pinot Noir and the terroir of Bouzy.

How it is made

Rosé made by short whole-bunch skin maceration before pressing. Fermentation with indigenous yeasts, ageing in oak and terracotta, and malolactic fermentation, followed by a second fermentation in bottle and ageing on the lees. Extra Brut style.

Vineyard & terroir

About Benoît Lahaye

Benoît and Valérie Lahaye make quite exceptional champagnes from superb terroirs, including four single-vineyard champagnes. They have just 4.8ha of vines in Bouzy and Ambonnay that they work together with their two sons, and an incredibly muscular horse called Tamise used for ploughing to avoid compaction of the soils. Since changing to biodynamic viticulture in the late 2000s the most notable benefit has been that the grapes attain higher levels of ripeness whilst retaining the same level of acidity. As the grapes regularly give 11% alcohol for the first fermentation and there is a natural density to the juice, most of their champagnes are now disgorged without dosage and since 2008 they have carried out the malolactic fermentations. He never uses sulphur at disgorging, and after several experiments, now bottles one cuvée Violaine with no sulphur used at any stage. Total sulphur levels throughout the range average a very low 15mg/l.
