Why Cave selected it

A characterful expression of Aligoté that combines northern Burgundy freshness with texture and depth. Thoughtful sourcing and gentle winemaking make this an engaging white for the table.

About the wine

Athénaïs de Béru’s Bourgogne Aligoté 2022 is a bright, characterful white from limestone-rich vineyards around Saint-Bris in northern Burgundy. Made entirely from Aligoté, it combines lively citrus and orchard fruit with a fresh, mineral finish.

Lemon, crisp apple and pear lead into a gently rounded texture, with floral notes and refreshing acidity. A versatile bottle for oysters, grilled fish, goat’s cheese or an aperitif.

Athénaïs is the winemaker behind Château de Béru, near Chablis. Her own-name range draws on partnerships with growers working organically or biodynamically, bringing the same sensitive approach to purchased grapes. Gentle pressing, natural fermentation and patient maturation allow the grape and its origins to speak.

How it is made

Gentle pressing and fermentation with indigenous yeasts, followed by maturation in used oak and/or tank. Bottled without fining or filtration. Exact vessel proportions and sulphur additions for the 2022 lot are not confirmed.
