This is a blend of all the 'caillotes' (limestone pebbles) parcels of the domaine, the vines are 25yo on average, vinified in stainless steel and aged for at least a year. A really textural style of Sancerre that really showcases some terroir rather than just Sauvignon typicity.
Notes on the producer
Domaine Thomas in Sancerre is a hidden gem nestled in the heart of the Loire Valley. This family-run winery is a true testament to the art of traditional winemaking, where quality and terroir are the guiding principles. The estate vineyards are tended to with the utmost care, producing grapes that are a true expression of their unique terroir. The winery's commitment to sustainable farming practices ensures that the grapes are grown in harmony with nature, resulting in wines that are a reflection of the land they come from.
The winemaking process at Domaine Thomas is minimalistic, with a focus on letting the grapes speak for themselves. Fermentation takes place in stainless steel tanks, with the wine then ageing on its lees to develop a rich minerality and depth of flavour. The resulting wines are elegant and expressive, with a bright acidity and a purity of fruit that is unparalleled.
