Grapes are from younger vines planted in clay and sandy soils. Spontaneous fermentation at uncontrolled temperature, with native yeasts in steel before ageing in steel tank for 6 months, no filtration. A vibrant pink colour full of tang and minerality ad oh so gluggable.
Notes on the producer
Holistic viticulture guru of Sicily, Alessandro Viola has 20 hectares of vineyards on the north western coast of Sicily. With an oenology and viticulture degree, he practices minimal intervention and organic methods in both the vineyards and cellar. The company philosophy is very simple: make wine using only grapes; this isn't due to purely ethical reasons but also in his realisation that pure wine is not only possible but that the result is better.
He strives to maintain the natural balance in nature; relying on the natural fertility of the soil capable of renewal on the condition that the man does not disturb the balance. "In wine there is a perfect chemical balance, only nature can go that far, who We are we to do better than nature?"
