Why Cave selected it

A benchmark Sicilian orange wine with saline drive and fine tannins; low‑intervention and superb with briny seafood.

About the wine

The Grapes are destemmed and begin spontaneous fermentation in steel vats with native yeasts, macerating with their skins for about 5 months in steel tanks. Finally the wine is bottled without being filtered and only a minimum amount of sulphites are added. Salty, Savoury with a lick of citrus fruits. This is wonderful paired with sardines, anchovies and anything briney.

About Aldo Viola

Aldo Viola is a family winery in the city of Alcamo, on the northwest coast of Sicily. With 16 hectares of organic vineyards, only the highest quality grapes are used to make the natural wines. A small production of around 10,000 bottles a year across four different labels. The vineyards are cultivated using the Guyot system and lie at 400 m above sea level. Organic farming methods are used along with organic and biodynamic treatments. The harvest is carried out manually at the optimum moment of ripeness.
