This is his ancestral method sparkling or pet nat. The first fermentation takes place in steel, when the quantity of sugars necessary for the second fermentation is reached, the wine is bottled and capped with a crown cap so that it can finish the fermentation in the bottle and become sparkling. At the end of fermentation the wines remain "sur-lie". The resulting wine is a light and fresh bottle of fizz great for an aperitif or to have half way through a big wine night to refresh and reset!!
