Made in the Emilia Romagna region of Italy, Reggiano is a traditional hand made cheese whose recipe and methods of production have barely changed since 12th Century. Even the cows diet is controlled to include only fresh grass, hay or alfalfa. The enforcement of these rules adds to the production costs but the result is a cheese whose flavour and quality is guaranteed. Salty, Sweet, Nutty. Unpasteurised and non vegetarian.
