Hand picked grapes are directly pressed into concrete before fermentation with wild yeast. the wine is then aged in tank for a couple of months before bottling. Unfined, unfiltered, zero sulphur. This is a thirst quenching, crunchy and slightly smoky rose from a really interesting region. Its delicious, nuf said.
Notes on the producer
Pauline Broqua may be relatively new to winemaking, but the complexity and depth of this wine betrays no lack of confidence. Pauline made the switch from sommelier to vigneron in 2018 and expanded her Domaine des Buis to 7 hectares in 2019. Deeply committed to natural techniques, she uses no chemical additives and cultivates several different varieties. Alongside rows of cabernet franc, negret de banhars, and chenin grows a grape particular to a certain part of inland southwest France: known as braucol in Gaillac, it goes by the name fer servadou in the area around the town of Marcillac-Vallon, in the department of Aveyron.
