Bodegas El Maestro Sierra, Pedro Ximenez -Raisins, Spice, Caramel
Spain / Fortified, Sherry / Pedro Ximenez / Sustainable
The grapes are harvested overripe and then are dried under direct sunlight for about fifteen days. The pressing is difficult and the must’s sugar content is as high as 300 grams per litre. It then starts a slow fermentation process and is fortified up to 10%. During the Autumn and Winter months the wine is clarified and further fortified up to 15%, then matured for five years in a solera system. Although sweet this is not to cloying. Great with cheese or poured over ice cream or just a dessert in a glass.
From an 8 hectare parcel in Valdivilla, in Santo Stefano Belbo, the heart of Moscato country. The youngest vines are 27 years old, while the oldest are up to 50.Grapes are hand harvested before spontaneous Fermentation to 5-5.5% alcohol with indigenous yeasts. Moscato D'asti often gets a bad rap and their are some mass produced poor examples out there but when it's good it can be very enjoyable. This is sweet, fun, frivolous and full of joy. Enjoy as an aperitif, with spicy food or with deserts.
