We're really pushing the boat out with this one. Chef Charlie is cooking up a 5 course menu that's going to paired with 5 different wines from our favourite Champagne producer Chartogne-Taille.

Chartogne-Taillet, located in Merfy near Reims and led by Alexandre Chartogne, has achieved remarkable excellence. Starting in 2006 at age 23 and influenced by Anselme Selosse, Alexandre emphasizes understanding his terroirs and sub-soils, working with soil experts Claude and Lydia Bourguignon.

Alexandre produces eight single-parcel champagnes, focusing on soil health and organic practices. He uses animals for pest control, avoids heavy machinery, and employs low yields, natural yeasts, and sensitive élevage in oak barrels. His champagnes are elegant, nuanced, and poised. Constantly experimenting, Alexandre's restless energy and curiosity drive his innovative approach.
