Mayte is an old Navarre residence located in the heart of the village of Saint-Jean-le-Vieux in the Basque Country of France. Since 1884, the Mayte family has carried on the tradition of Basque charcuterie. Today, Eric and Sylvie, fifth generation, have taken over the reins of the family business. This a a round curd saucisson rather than the traditional sausage shape. It is 100% pork and packed with black pepper.
