The grapes are harvested manually before being traditionally aged and then vinified with the minimum of human intervention in order to let the Sauvignon's natural yeasts express themselves in the heart of their cuvée. This is a very expressive and pure Pouilly Fume and it is hard to find find fault with this wine.

Notes on the Producer

The Dominique Pabiot estate, located on the banks of the Loire, has been passed down from father to son for generations. Covering an area of 11 hectares, these plots are now managed by Dominique Pabiot and his daughter Mallorie, both of whom have the ambition to produce great wines while respecting the terroir and the environment. The Sauvignon vines grow on soils with varied soils, allowing this unique grape variety of the estate to express all its uniqueness. The Pabiot family has been working for generations to transmit this passion for the wine world and the values of this domain.
