Manual harvested, destemmed. Fermentation with indigenous yeast at controlled temp. in stainless steel vat. 6 days maceration on skins with minimal suplhur used at bottling. This is not your typical Sauvignon not bright aromatic and grassy this is full of bergamot & burnt honeycomb. Texture from the skin contact this is a really interesting wine and well worth a go if you want to try something a little different.

Notes on the producer

Ronco delle Betulle nestles in the hilly eastern part of Friuli in a subzone called Rosazzo, an estate of approximately seventeen hectares, of which ten are under vine. The hills of Rosazzo benefit from a special microclimate determined by several geographical factors: its proximity to the sea and its altitude. At Ronco delle Betulle only grapes from its own vineyards, about 12 hectares, are vinified, cultivated following an artisanal approach based on common sense, where the use of synthetic chemicals, herbicides or chemical fertilizers is not contemplated. Neither artificial irrigation nor mechanical harvesting is used.
The care of the wooded areas and the use of an innovative natural phyto-purification system of the processing water contribute to safeguarding the environment in a sustainable way. The grapes are harvested strictly by hand with the right physiological ripeness, softly de-stemmed, left in contact with the skins for a few hours or days depending on the variety and vintage. Alcoholic and malolactic fermentations occur naturally, without the use of selected yeasts or bacteria, with moderate temperature control.
After adequate and patient aging in steel and oak barrels, the wines are bottled with very light filtration for the whites, without filtration for the reds.
