Mayte is an old Navarre residence located in the heart of the village of Saint-Jean-le-Vieux in the Basque Country of France. Since 1884, the Mayte family has carried on the tradition of Basque charcuterie. Today, Eric and Sylvie, fifth generation, have taken over the reins of the family business. Classic dry cured pork saucisson with a touch of pigment d’Espilette to give a little piquancy.
